Afternoon Tea

Today for afternoon tea we are having a wide selection of treats. We are serving:
       -Peach Cheesecake
       -Chocolate Chip Cookies
       -Tomato and Mozzarella Salad
       -Tres Leches Cake
       -Garden Vegetable Quiche
       -Spinach Dip with crudités

Here is the recipe for a glazed strawberry tart that we will be serving tomorrow.

Glazed Strawberry Tart
   Ingredients:
       -1 1/3 cups all purpose flour
       -1/2 cup finely ground almonds
       -1/3 cup sugar
       -1 teaspoon grated lemon rind
       -1/4 teaspoon salt
       -6 tablespoons cold butter, cut into pieces
       -1 egg
       -1 teaspoon vanilla extract
       -3/4 cup seedless raspberry or strawberry jam
       -1 teaspoon lemon juice
       -2 pints strawberries, hulled and sliced in half
       -Sweetened whipped cream (optional)

1. Stir together flour, almonds, sugar, lemon rind and salt in a large bowl. Cut butter into flour mixture with a pastry blender or 2 knives, until coarse crumbs form. Whisk together egg and vanilla in a small bowl; stir into flour mixture until a dough forms. Shape into a disk. Wrap in plastic; refrigerate for at least 1 hour or overnight.

2. Preheat oven to 350 degrees F. Grease and flour a baking sheet. Place dough on baking sheet; pat into a 10 inch circle, forming a high edge. Pierce bottom of dough all over with a fork. Bake until slightly browned, about 25 minutes. Place baking sheet on a wire rack and let cool for about 10 minutes; transfer shell to rack to cool completely.

3. Melt jam with lemon juice in a small saucepan over low heat until spreadable. Spread 1/2 cup jam mixture over bottom of shell arrange berries on top, cut sides down. Brush with remaining jam mixture. Serve with whipped cream on the side if desired.

Makes about 8 servings.

Newport Music Festival

The Newport Music Festival is having its 40th anniversary season July 11-July 27. There are a total of 60 concerts being held over the 17 days with 35 different artists from around the globe. You will be able to see concerts ranging from an eleven year-old pianist to a world-renowned trumpeter. All of these concerts are held in the famous Newport Mansions. 

The morning concerts are usually held at 11 am, afternoon concerts are usually at 4 pm or 6 pm, and evening concerts are at 9 pm at the Breakers. While most of the concerts are held in the day, there are also two Midnight Concerts at Marble House. Tickets are $25. If you aren’t a night owl, there are also “Box Lunch Concerts.” Morning concerts are at 11 am followed by lunch around 1 pm. The optional lunch begins at 1 pm prior to the afternoon concert at 2 pm. The boxed lunches are included in the price of your ticket for mornings and are optional for the 2 pm concerts. During the seventeen days, there are four box lunch concerts at Belle Mer Salon on Goat Island. Tickets cost $45 per person for the mornings and $35 (without lunch) and $45 (with lunch) for afternoons.

On Wednesday July 23rd, there is a Gala at The Breakers Mansion. The evening begins at 7 p.m. with cocktails and hors d’oeuvres on the Terrace of the Breakers. The performance is the North American Debut performance by Icelandic superstar tenor Garðar Thór Cortes at 8 pm. There is an après-concert reception to meet the artist with coffee and desserts to finish off the night. Tickets are $100 per person, a portion of which is tax deductible.

There are two concert series:


The “Amo, Amas, Amadeus” Series where you can hear all 18 of Mozart’s piano sonatas preformed from memory by German pianist Michael Endres, in a series of five concerts. Tickets are $100.
The Victor Borge Composer Series in honor of legendary Entertainer Victor Borge. The Festival will present 17 afternoon concerts featuring handpicked selections from many of music’s greatest composers.

White Chip Meringue Dessert Squares

     Guests have been asking for this recipe constantly. This is our first recipe post, hope you like it!

White Chip Meringue Dessert Squares

Crust:

  • 2 cups all purpose flour
  • 1/2 cup powdered sugar
  • 1 cup (2 sticks) butter or margarine, softened

Topping:

  • 2 cups (12-ounce package) Nestle Toll House Premier White Morsels
  • 1 1/4 cups sliced or chopped nuts, divided
  • 3 egg whites
  • 1 cup packed brown sugar

For Crust: Combine flour and powdered sugar in a medium bowl. Cut butter in with pastry blender or 2 knives until mixture resembles coarse crumbs. Press onto bottom of ungreased 9 x 13 inch baking pan. Bake in preheated 375 F oven for 10-12 minutes or until set.

For Topping: Sprinkle morsels and 1 cup nuts over hot crust. Beat egg whites in small mixer until frothy. Gradually add brown sugar. Beat until stiff peaks form. Gently spread egg white mixture over morsels and nuts. Sprinkle with remaining nuts.

Bake at 375 F for 15 to 20 minutes or until golden brown. Serve warm or cool. Cut into bars. Makes about 2 dozen squares.
